Smoked Brisket- Wow


With Tim's carnivore diet we are always looking for new ways to cook our beef. Frying, roasting and barbecuing were our usual methods of cooking. We decided to purchase a Traeger Smoker Grill to get the smoked flavour. WOW!! We've been so impressed. The flavour and juices kept in the meat are amazing. The grill is outside on the deck but the cherry on top is the SMELL of a campfire. Love it.

One of our first experiences with the Traeger Smoker Grill was to cook a brisket. We chose the hickory hard wood pellets for the hickory flavour.

We coated one piece of brisket liberally with Montreal Steak Spice, and to the other we sprinkled Himalayan salt. The recipe says to season, wrap the brisket in plastic wrap and let sit in the refrigerator for 12 to 24 hours for extra flavour. We skipped this step for lack of time.

We took recipe from the Traeger website and adapted it a bit.

The Traeger was set to 225*F to preheat, lid closed for 15 minutes.

Place meat fat side down on the grill grate and cook for 6 hours or until internal temperature reaches 160F or until internal temperature reaches 160*F. I like that we are able to use the smoker’s temperature probe to keep track of this. Remove brisket from the grill and wrap in foil.

Place brisket back on grill and cook until it reaches a finished internal temperature of 204*F this should take an additional 3-4 hours.

Remove from grill and allow to rest in the foil for at least 30 minutes.

Slice. What an amazing taste of smoked meat, and great amount of moisture in the brisket. Great eating experience!

I’d highly recommend getting the Traeger App. It’s super helpful, you don’t have to go to check the temperature at the smoker, nor do you have to lift the lid which allows heat to escape, you just glance at your smart phone app to view the temperature and the cooking time remaining.
